The Italian Diabetes Cookbook
Delicious and Healthful Dishes from Venice to Sicily and Beyond
by Amy Riolo
January 2016
Italian food has a reputation of being fattening, high in carbohydrates and generally heart-horrible. Americans have taken Italian food, and added a ton of cheese to everything, plus frying things, and turning the food into artery-clogging nightmares. Real Italian food is healthful, delicious, and the most popular cuisine in the world. At its core, classic Italian cuisine is all about preparing fresh ingredients like fruits and vegetables, whole grains, beans, legumes, dairy, seafood, and poultry in time-honored techniques that preserve both tradition and flavor.
With THE ITALIAN DIABETES COOKBOOK[January 2016, $18.95 US / $23.50 CAN] award-winning author and Mediterranean expert Amy Riolo brings together a wonderful collection of authentic and naturally healthy recipes from her Italian homeland. The book includes 150 recipes for all occasions, while helping fine food lovers everywhere achieve their health goals, including pescatarian and vegetarian options. Highlights include:
- Ricotta, Grilled Eggplant, and Fresh Mint Bruschetta
- Cracker Rings with Black Pepper and Fennel Seeds
- Roman-Style Rice and Herb-Stuffed Tomatoes
- Whole-Wheat Ziti with Goat Ragu
- Swordfish with Olives, Capers, Herbs, and Tomatoes
- Red Pepper, Yellow Tomato, and Artichoke Salad
- Espresso Panna Cotta
- Tuscan Seafood Stew
The Chief Blonde Remarks: So many great things about this book! I love how each dish is captioned in it’s Italian name so I can brush up on my “Reading Italian”. Of course, essential with a medical related cookbook are good nutrition facts and The Italian Diabetes Cookbook has those clearly marked for each recipe. I am also loving how many recipes have wine suggestions and lovely notes about this dish in relation to Italian Living Tradition.
This cookbook does over 2 dozen photos of the recipes. The gorgeous one for spaghetti squash “pasta” with shrimp, tomatoes and basil had me including this recipe into my meal plan for this week!. The recipe descriptions are so vivid and the ingredients so fresh and vibrant, that you will be dreaming of ways to serve each selection on the veranda. Sigh…

I agree, Italian food should be healthy, it becomes fattening when you included all the cheese and fried additions. Thank you for sharing this post.
It’s Italian. I love Italian food!
I love that all the recipes are heart healthy and low in sugars!! Great recipe to eat healthier for anyone!!
Our family loves Italian food and are eating healthier so this is perfect for us. Diabetes runs on all sides of our families so we are doing all that we can to prevent getting it.
It’s so hard to cook italian for diabetics because of the carbs/sugar. I like how this book gives you some ways of doing that.
I enjoy collecting recipes, but I get excited when it’s related to health and diabetes since I have this disease to contend with. This cookbook is perfect!
I love Italian dishes so I think this would be a wonderful addition to my cookbook collection! My father has diabetes as well, do this would be nice to have for him as well. 🙂
I love that it includes 150 easy to prepare dishes. I dislike cooking but don’t mind the easier ones.
The aspect of this book that appeals to me most is the diabetes portion. As a Type 1 diabetic, that is important to me.
I like that it concentrates on the lower carb aspects of Italian Cooking, you tend to just think of pasta when you think Italian, but that’s not the case.
I love that I can have just one book of recipes for the diabetic lifestyle and not only that, but it is ITALIAN!! yum
I like that they are Italian recipes, but are healthful!
My mom is newly diagnosed with diabetes. i would love to get this cookbook for her. she struggles to find the recipes for meals she can enjoy with our family.
I love that it says the recipes are easy to prepare! I hate it when cookbooks have tons of complicated recipes with crazy, never heard of ingredients!
I love that it has diabetic friendly recipes and is for real Italian food. Commericialized Italian food is usually not very diabetic friendly.
I love that this book is healthy items and for people with diabetes. My mom is looking for recipes that she can eat and these sound like it might work for her.
I like that she has taken traditional dishes (like the Spinach Fettuccine with Walnut-Ricotta Pesto) and them really done her research on how to make them for people with diabetes.
I would be excited to read about how to make real italian dishes that are heart healthy and robust in flavors with real ingredients!
I love Italian food, and if I can make it myself then that’s fabulous.
I like that it has 150 easy-to-prepare, satisfying, and robust Italian dishes.
