still blondeThe Chief Blonde Remarks:  So many great things about this book!  I love how each dish is captioned in it’s Italian name so I can brush up on my “Reading Italian”.  Of course, essential with a medical related cookbook are good nutrition facts and The Italian Diabetes Cookbook has those clearly marked for each recipe. I am also loving how many recipes have wine suggestions and lovely notes about this dish in relation to Italian Living Tradition.

This cookbook does over 2 dozen photos of the recipes.  The gorgeous one for spaghetti squash “pasta” with shrimp, tomatoes and basil had me including this recipe into my meal plan for this week!. The recipe descriptions are so vivid and the ingredients so fresh and vibrant, that you will be dreaming of ways to serve each selection on the veranda.  Sigh…

    I like the aspect of Italion food that is diabetic themed. I know some spagetti sauces have more sugar than others. My family like Italion type foods.

    What I like most about this book is that the recipes are easy to prepare, because if they’re to hard or too complicated I probably wouldn’t want to try them.

    I have recently been informed that I am boarder line diabetes. This book will be great for new recipes, that will not be too full of everything that is so “GOOD” for me….
