The Italian Diabetes Cookbook
Delicious and Healthful Dishes from Venice to Sicily and Beyond
by Amy Riolo
January 2016
Italian food has a reputation of being fattening, high in carbohydrates and generally heart-horrible. Americans have taken Italian food, and added a ton of cheese to everything, plus frying things, and turning the food into artery-clogging nightmares. Real Italian food is healthful, delicious, and the most popular cuisine in the world. At its core, classic Italian cuisine is all about preparing fresh ingredients like fruits and vegetables, whole grains, beans, legumes, dairy, seafood, and poultry in time-honored techniques that preserve both tradition and flavor.
With THE ITALIAN DIABETES COOKBOOK[January 2016, $18.95 US / $23.50 CAN] award-winning author and Mediterranean expert Amy Riolo brings together a wonderful collection of authentic and naturally healthy recipes from her Italian homeland. The book includes 150 recipes for all occasions, while helping fine food lovers everywhere achieve their health goals, including pescatarian and vegetarian options. Highlights include:
- Ricotta, Grilled Eggplant, and Fresh Mint Bruschetta
- Cracker Rings with Black Pepper and Fennel Seeds
- Roman-Style Rice and Herb-Stuffed Tomatoes
- Whole-Wheat Ziti with Goat Ragu
- Swordfish with Olives, Capers, Herbs, and Tomatoes
- Red Pepper, Yellow Tomato, and Artichoke Salad
- Espresso Panna Cotta
- Tuscan Seafood Stew
The Chief Blonde Remarks: So many great things about this book! I love how each dish is captioned in it’s Italian name so I can brush up on my “Reading Italian”. Of course, essential with a medical related cookbook are good nutrition facts and The Italian Diabetes Cookbook has those clearly marked for each recipe. I am also loving how many recipes have wine suggestions and lovely notes about this dish in relation to Italian Living Tradition.
This cookbook does over 2 dozen photos of the recipes. The gorgeous one for spaghetti squash “pasta” with shrimp, tomatoes and basil had me including this recipe into my meal plan for this week!. The recipe descriptions are so vivid and the ingredients so fresh and vibrant, that you will be dreaming of ways to serve each selection on the veranda. Sigh…
