still blondeThe Chief Blonde Remarks:  So many great things about this book!  I love how each dish is captioned in it’s Italian name so I can brush up on my “Reading Italian”.  Of course, essential with a medical related cookbook are good nutrition facts and The Italian Diabetes Cookbook has those clearly marked for each recipe. I am also loving how many recipes have wine suggestions and lovely notes about this dish in relation to Italian Living Tradition.

This cookbook does over 2 dozen photos of the recipes.  The gorgeous one for spaghetti squash “pasta” with shrimp, tomatoes and basil had me including this recipe into my meal plan for this week!. The recipe descriptions are so vivid and the ingredients so fresh and vibrant, that you will be dreaming of ways to serve each selection on the veranda.  Sigh…

    The aspect of the book that inspires me is the ability to create healhty, Italian food for my family. Diabetes runs in my family, but we all love Italian food.

    What appeals to me is that while the Italian food is the perfect cuisine for for diabetics they are also heart healthy.

    Aside from the recipes and helpful explanations, I like that the book includes a “Where To Buy Guide” to help with some of the less common ingredients. Nice touch.

    I think that italian food tends to be heavier, so it’s nice to have some healthier Italian options.

    Venice and Sicily are my two favorite regions of Italy. We all know by now that Mediterranean diet is heart healthy. I would love to see how age old Italian recipes have been adapted for diabetes. Lord knows we all have to adapt to healthy cuisine.

      It has a ton of colorful pictures for each meal to go with the recipe, I like that. I also like that it has an Italian flair. I think the best meals are Italian inspired.
