A creamy delicious Stuffed Avocado Salad Recipe, perfect for summer combining creamy avocado with nutritious tuna served over a bed of crunchy salad greens. This is the kind of salad that you can adjust the amount of the ingredients to your liking.

Serves: 4
Ingredients
  • 4 avocado
  • 2 5 oz cans of albacore tuna in water
  • 2 Tablespoons any kind of mayo you wish
  • 2 Tablespoons chopped celery
  • ¼ cup dried cherries (or dried cranberries)
  • 1 diced English cucumber (or regular cucumber)
  • 1 bag spring mix salad of your choice
  • 4 Tablespoons Balsamic Vinaigrette
Instructions
  1. Cut avocados in half and remove pit.
  2. Open tuna, drain, and put in medium bowl and flake with fork
  3. Make tuna stuffing mixture by combining flaked tuna, mayo, chopped celery and dried cherries
  4. Divide bagged spring mix lettuce onto 4 plates
  5. Dress salad with Balsamic Vinaigrette , distributing approx. 1 TBS per plate
  6. Sprinkle diced cucumber evenly over plated spring mix
  7. Place 2 avocado halves on each plate
  8. Mound tuna mixture into avocado halves to "stuff" them
  9. Serve and enjoy!

    Oh, my gosh…those items. I can’t imagine that phone cover. 🙂 I am ready for summer, and this does sounds good. I don’t think I’ve ever had balsamic vinegarette on tuna before. Today is Sorry Charlie Day for reflecting on rejections and becoming stronger. I bet those socks got rejected by a lot of people, but I bet they bring in a lot of money, too. 🙂

    I’ll bet this is good even without the avocado…because I usually have the rest of the ingredients on hand, but not always an avocado (at least, not always one that’s ripe yet!).

    I admit that I am not the biggest fan of avocados but I am fully aware of the vitamins and minerals that it packs. I am lacking potassium because of medications and a thyroid removal which avocados have plenty of. So this I have to try because all the other ingredients are familiar to me and delicious. Super healthy lunch or dinner.
