Quinoa Cuisine makes Superfoods Super-Delicious!

The Chief Blonde Remarks: The book’s back cover states:
“You know Quiona is easy to make and good for you”
Well…NO..I didn’t know. Heck, I didn’t even know how to say “Quinoa”, had to have my 19 year old daughter tell me (KEEN-WAH).
Quinoa is rich in protein (substitute for your daily serving of meat), calcium, iron, potassium and fiber. Plus Quinoa is a good source of Vitamins B and E. Because Quinoa is high in protein and fiber, it makes you feel fuller longer so it perfect for people trying to maintain an ideal weight. People with Celiac disease can eat it because its gluten-free.
The thing I loved about this book, Quinoa Cuisine by Jessica Harlan and Kelley Sparwasser, was that it motivated me to “try” Quinoa. Now that I have, it will be a regular staple in my panty, probably replacing white rice and barley in anything where I can make the switch. It’s obvious that I can replace it my soups/stews because this book has delicious recipes for mushroom soup, hearty fall vegetable stew, and two-bean chili! But you’ll also find recipes that deal with Quinoa seeds, flakes and flour. Who knew? You can also make Desserts (Cranberry-Cherry Tart), Main Dishes (Chicken Potpie with Quinoa biscuit crust), Snacks (Mini-Pizzas), etc. I love how this book is organized into season and each recipe is labeled with icons so you can easily make the recipe in the category that you need: Vegan, Gluten-free, Freezes Well, 30 Minutes or Less. Women over 45, this book motivated me to try something new and now it will in my diet for life!
My favorite recipe in the book so far is Quinoa Muffins. I load them up with blackberries and strawberries, and raspberries. MMMM.
