 Glazed Vanilla Pineapple — Girls LOVE it!

I have been making this recipe for Glazed Vanilla Pineapple for a few years now. The first time I made it, I cooked it for a group of my girlfriends who were at my house for drinks and crafts. It was the first time that I had ever made a dessert for a girl’s night out, when everyone went back for seconds. I used butter, rum and ice cream in the original version.

I am always looking for ways to lighten up a recipe and recently I found Brummel & Brown Spread at my local Target.

Brummel & Brown Spread

I found that I like Brummel & Brown spread on my toast in the morning because it’s made with nonfat yogurt which adds a creamy taste with a nice little tang. The fact that it has 50% less calories than butter with 0g Trans Fats and No Hydrogenated oils is extra appealing to me.

This got me thinking, where else could I substitute the Brummel & Brown Spread? When I checked the Brummel and Brown’s Facebook page, I saw a lots of recipes. I was surprised at the versatility of the brand.

Glazed Vanilla Pineapple

I remade my Glazed Vanilla Pineapple substituting Brummel & Brown Spread for the butter and used vanilla instead of rum for the flavoring. The dish turned out pretty, but as I had served the original recipe with ice cream, I felt it needed a glaze.  So I made a glaze from the Brummel & Brown Spread as well. The recipe follows.

This showy dish served warm will be the star of your summer picnic or winter soiree. The nonfat yogurt in the spread adds a tang to the pineapple and a creaminess to the glaze while adding a lower calorie twist!

Serves: 6
Ingredients
  • Pineapple:
  • 10 pineapple spears, full length
  • 3 Tbs vanilla
  • 3 Tbs brown Sugar + extra for dusting
  • 2 Tbs Brummel & Brown Spread
  • Glaze
  • ½ cup confectioners sugar
  • 1 Tbs. Lemon
  • 2 Tbs. Brummel & Brown Spread..
Instructions
  1. Preheat oven to 375
  2. Place pineapple spears in a rimmed baking dish (glass is pretty)
  3. Whisk together vanilla and brown sugar
  4. Brush some of the vanilla mixture on pineapple spears
  5. Dot pineapple with Brummel & Brown spread
  6. Roast in oven until liquid has evaporated, about 30 minutes
  7. At 10 min intervals during roasting, apply additional vanilla mixture
  8. With 2 minutes before cooking end time, dust pineapples with additional brown sugar
  9. Remove pineapple from oven and cool slightly on wire rack
  10. Meanwihle, for Glaze, blend confectioners sugar, lemon juice and Brummel & Brown Spread.
  11. Drizzle Glaze over Warm Pineapple
  12. ENJOY!

    I am not a big pineapple person, but I think I could do this with fresh sliced peaches, hmmmm. I especially like that Brummel and Brown lightens the original recipe!
