You know that night? When you need to get dinner on the table NOW? Yet, your soul longs for something tasty and flavorful, well here’s THAT recipe…Cilantro Lime Shredded Chicken Tacos (or Nachos if you like).

I am Alexzandra O’Donnell, a new food blogger on Still Blonde, I am bringing a twist on a traditional taco by adding a flair of Cilantro and Lime via recipe ingredients.

Cilantro Lime Shredded Chicken Tacos is a quick light Mexican dinner that you can whip up in no time but your guests will be sure you slaved for hours. This dish works well as a nacho recipe also.

Ingredients
  • 2 large chicken breast
  • 1 package taco seasoning
  • 1 package cilantro lime skillet sauce (I used Frontera but any similar will do)
  • 1 lime
  • ¼ cup fresh cilantro
  • water
  • 4 tortillas
  • ¼ cup lettuce (approximate
  • ¼ cup of your choice of shredded cheese (approximate and optional)
  • Baking spray ( I used Pam)
Instructions
  1. Spray 8x8 baking pan with non-stick spray (or any size baking pan will do)
  2. Sprinkle ¼ of taco seasoning over the bottom of the and place chicken breasts on top of taco seasoning
  3. Coat tops of chicken with ¼ of taco seasoning as well. You should now have used half of the packet of taco seasoning
  4. Cook chicken at 450 for 10-15 mins or until thoroughly cooked
  5. While chicken is cooking, prepare sauce in a skillet
  6. Fill skillet with ¼ inch of water and add rest of taco seasoning, as well as cilantro lime skillet sauce and stir together. Cover; let simmer and thicken.
  7. When chicken is cooked, shred using two forks.
  8. Chicken in pan
  9. Add shredded chicken to sauce.
  10. Chop lime in half. Using only one half of lime, squeeze lime juice over top of the chicken in the skillet. Stir together.
  11. Fill tortilla with a light amount of lettuce and fresh cilantro leafs. Top with Cilantro Lime Shredded Chicken from skillet.
  12. Add cheese to taco (optional)
  13. Squeeze quarter of lime over top and enjoy!
  14. Cilantro Lime Shredded Chicken Taco
  15. You can also use the Cilantro Lime Shredded Chicken over nachos instead of tacos. MMM!

    My husband and I enjoy any Latin themed food. These tacos look great plus we try to eat chicken in place of red meat. I know what is for dinner at our house tonight!

    That is one interesting recipe for tacos. I like that the chicken is baked and shreddedand would like to try Cilantro lime seasoning.

    Key Lime Cilantro…wow! No, I haven’t heard of it, but it would be fun to try. Tacos are fun because you can change them up and really get flavorful. Like cilantro lime chicken. Taking a base like chicken and adding flavors really brings life to it.

    I love cilantro and lime so I will have to try this. I will probably have to eat it myself however since my kids won’t eat anything that isn’t plain and then covered in ketchup.
