Prepare this Big Batch Cauliflower Lasagna for your next party. You will need all 3 pans as it will disappear lickity split! Many variations to fit your all your guests wishes.

Ingredients
  • 3 lb. ground meat (beef, chicken, turkey or vegan ground meat subsititue) browned and drained
  • 3 16oz cans of tomato sauce (or 6 8oz cans)
  • 3 small chopped onions or 3 tbs dried minced onions
  • 1½ tsp. garlic salt
  • 1½ tsp. oregano
  • 16 oz portabello mushrooms chopped
  • 3 16oz containers cottage cheese (small or large curd, regular or lowfat your choice)
  • 3 heads of cauliflower with green stem and leaves removed
  • 16 oz bag of shredded mozzarella cheese
Instructions
  1. Over medium heat, in a large frying pan or dutch oven, mix browned meat, spices
  2. Add in tomato sauce and sliced mushrooms
  3. Simmer until hot
  4. Slice 3 whole cauliflowers heads into slices about ½" thick. Any smaller pieces that fall off head, slice them ½" thick as well
  5. Use cauliflower slices to cover the bottom of 3 13" x 9" pans
  6. Cover cauliflower with cottage cheese using one container per pan
  7. Add ⅓ of meat mixture to each pan spreading over cottage cheese
  8. Sprinkle ⅓ of mozzarella cheese over each pan
  9. Bake one hour at 350 degrees. Check every twenty minutes. If browning too quickly, cover pan with aluminum foil.
  10. When removing from oven, you will probably need to drain liquid from each pan.
  11. Let sit 5 minutes before serving.
  12. Refrigerate or freeze leftovers. (Freezes great!)
  13. Variations: Feel free to add the cheese of your choice instead of mozzarella. Add in spinach. Omit mushrooms. This is a dish that you can change up to your preference. Have fun!

    I would like the All-Clad 59946 Stainless Steel Lasagna Pan with Lid. It’s a good quality heavy-duty pan that will last for years. Really like that it has side handles that make it easy to lift in/out of the oven. Also, like that it comes with a fitted plastic lid for transport or refrigerating leftovers right in the pan.

    The Chicago Metallic 26783 Lasagna Trio Pan would be perfect for my family. No one likes the same fixings in their lasagna so this would be awesome.

    I have a red kitchen and want to change it to orange, turquoise and lime green, so the Essenso Chambery Cast Iron Baking/Lasagna Pan with Four-Layer Enamel Interior and Exterior, Orange would be perfect! I can pass my current lasagna pan to my niece for her red kitchen.

    I like the Norpro 16×12 Ultimate Lasagna Roast Pan because of the substantial sized handles on the pan. Lasagna is heavy!

    I’d pick the Mrs. Anderson’s Baking Oblong Rectangular Baking Dish Roasting Lasagna Pan, Ceramic, Rose, 13-Inches x 9-Inches x 2.5-Inches. Since it’s red, it would match my dishware. I like ceramic bakers.
