Apple Cheddar Ebelskiver Danish Pancakes Recipe

April 11, 2016 By Shelley Zurek 490 Comments

What’s for Breakfast? Apple Cheddar Ebelskivers

Apple Cheddar Ebelskiver

What the heck is an Ebelskiver?

A Ebelskiver is the most wonderful breakfast creation. It’s a Danish pancake puff…mmm! Traditionally, these little beauties are made unstuffed or stuffed with apples, but I added a twist for you today! I stuffed them with extra sharp cheddar and apples. You have now reached breakfast Nirvana. You are welcome!

How do you make Ebelskiver?

Blackberry Ebelskivers Danish Pancakes

This gives you an idea of how easy and fun Ebelskiver are to make. You just pour in the batter, stuff them, pour over some more batter, flip them, and EAT! You do need the special pan shown, but they are fairly inexpensive and readily available.

I used this Ebelskiver Pan (Nordic Ware available on Amazon,  this one ) Also: Electric Model $35, Cast Iron Model $37.95, Ebelskiver Flipper $6.99.

Also, I think you will love these Specialty Food Ebelskiver Mixes, if you don’t want to whip them up yourself:

Author: Shelley Zurek
Recipe type: Breakfast
Serves: 30
Ingredients
  • Filling:
  • Cup of Apples sliced into bite sized chunks
  • Cheddar cheese diced into bite sized hunks
  • 1¾ cup all-purpose flour
  • ¾ tsp. baking soda
  • 1 tsp. baking powder
  • 1½ Tbsp. granulated sugar
  • ½ tsp. salt
  • 3 egg yolks
  • 1⅓ cups buttermilk
  • ½ cup sour cream or plain yogurt
  • 5 egg whites
  • 5 Tbsp butter, melted
Instructions
  1. For batter:
  2. In a bowl, whisk together flour, baking soda, baking powder, sugar, and salt.
  3. In a separate bowl, lightly whisk the egg yolks, then mix in the buttermilk and sour cream.
  4. Whisk the egg yolk mixture into the flour mixture until combined; expect the batter to be lumpy.
  5. Set batter aside.
  6. In another bowl, beat the egg whites on high speed with a hand mixer until stiff, 2-3 minutes (Dry peaks should not form)
  7. Gently fold the egg whites into the batter, ½ of the egg whites at a time.
  8. Your batter is now ready
  9. Brush the ebelskiver holes with melted butter.
  10. Heat pan on medium-medium high. Watch carefully.
  11. Spoon 1 Tbsp batter into each well and cook for 1 minute.
  12. Put one chunk of apple and one chunk of cheddar into the center of the batter of each pancake. For extra flavor add more apples and/or cheddar.
  13. Top with one Tbsp. batter.
  14. Cook until bottoms are golden brown and crispy, about 2 minutes.
  15. Using a wooden skewer (or chopsticks or a knitting needle) to flip the pancakes over.
  16. Cook until golden brown 2-3 minutes.
  17. Repeat with remaining batter.
  18. Makes about 30 if you don't eat them as you make them!

I would love to win some Traditional Danish Style Ebelskiver Mix. I adored the Ebelskivers I ate in Solvang CA as well as the even more authentic ones in Denmark. It would be so unique to make my own.

I think I would need to start with the basic cookbook, Ebelskivers Cookbook by Kevin Crafts, since I have never heard of these until today! They sound yummy, and seem somewhat easy.

When I researched it…. I found that the in order to get my chosen item (Kitchen scissors Chicken scissors multifunctional kitchen scissors 4mm thick stainless steel bone shear arredamento…) I still have to save enough to cover the remaining amount – having very little and a disability this would make my life a lot easier! The opportunity for a chance in itself is priceless but I can guarantee you that it would be an answer to a sought after item besides that of a computer, laptop, software etc. that I can use for documenting my medical problems.
