The Chief Blonde Remarks: So many great things about this book! I love how each dish is captioned in it’s Italian name so I can brush up on my “Reading Italian”. Of course, essential with a medical related cookbook are good nutrition facts and The Italian Diabetes Cookbook has those clearly marked for each recipe. I am also loving how many recipes have wine suggestions and lovely notes about this dish in relation to Italian Living Tradition.
This cookbook does over 2 dozen photos of the recipes. The gorgeous one for spaghetti squash “pasta” with shrimp, tomatoes and basil had me including this recipe into my meal plan for this week!. The recipe descriptions are so vivid and the ingredients so fresh and vibrant, that you will be dreaming of ways to serve each selection on the veranda. Sigh…

I love Italian food! Who would have thought you could eat good Italian food without feeling guilty when you are a diabetic. I am glad to find Italian food with that in mind.
I like that it features an array of combination of recipes for diabetics. The usage of “fresh ingredients like fruits and vegetables, whole grains, beans, legumes, dairy, seafood, and poultry” is a big plus for me.
My mom and sister in law are diabetic and they could really use this cookbook. And it has 5 star ratings so it should be a good one

I like that it’s aimed at diabetics. My other half has diabetes so we try to cook very healthy dinners.
Im a type 2 diabetic. Everything in this book is appealing to me. I love spaghetti and those meatballs look so good. My mom is an amazing cook so she would love this book. Each recipe includes notes on the history and cultural importance of each dish, and most contain wine pairings – my husband is Italian (father Naples and mother Sicilian) so I know how important the history of cooking is from each area!!

It looks like a great cookbook
My favorite aspect is that the blurb says these recipes are easy to prepare. A lot of the time, I have found Italian recipes to be overly complicated.
