Every year can’t be all hearts and cupids for Valentine’s day, right? Sometimes we just aren’t feeling the love. So I have created a Blue Chicken Recipe sure to tickle your fancy (and an entire Blue Valentine’s day recipe meal here).

What makes this chicken recipe blue? Blue Curaçao (a liqueur). Blue Curaçao and Curaçao taste exactly alike so if you don’t want your chicken to be blue, just use Curaçao. Don’t let the addition of this liqueur put you off making this dish. It adds a delicious orangey tang and the alcohol burns off during the cooking!

After browning, the chicken breasts are baked, then simmered in champagne and blue curacao. Mushrooms and heavy cream are then combined to make a rich sauce. This is a spectacular main course that will have your guests mesmerized between the color and the taste.

Serves: serves 4
Ingredients
  • 3 Tbs. all-purpose flour
  • 1 tspn. salt
  • 4 medium-size chicken breasts halves (skinless, boneless,)
  • 1 Tbs. butter
  • 1 Tbs. cooking oil of choice
  • 4-6 Tbs. Blue Curacao (or regular Curacao if you don't want your chicken blue)
  • ¾ cup champagne (or sparkling apple juice)
  • 1 cup chicken broth
  • 2 cups sliced fresh white mushrooms
  • 1 Tbs. butter, melted
  • ½ cup whipping cream
  • blueberries
  • Seedless grapes
Instructions
  1. Combine salt and flour
  2. Coat chicken in flour mixture
  3. Heat 1 Tbs. butter and oil in large skillet
  4. Add chicken and cook for 5 min each side (or until slightly browned on each side)
  5. Place chicken in a oven proof pan in a 350 degree oven for 20 minutes
  6. In a skillet, add curacao, champagne, and broth and simmer
  7. Add the oven cooked chicken and simmer, uncovered for 20 minutes
  8. Cook mushrooms in 1 Tbs butter, add to chicken along with whipping cream.
  9. Spoon all into a warmed serving dish and serve with along side a separate bowl of fruit of grapes and blueberries.

    This sounds super, although I wouldn’t go with the blue, but it has ingredients I haven’t made anything like this, and perfect for Valentine’s!

    I enjoy a cocktail with Blue Curacao but have never considered cooking with it. Shelley you are a Super Star! My husband and I love chicken and have been known to have a drink or two (or five or six) and this sounds like a dish we would like.

    One day when I was growing up I put some blue food coloring in our milk pitcher. My sister refused to drink it. I think I’d use the regular Curacao. But I do like blueberries.

    I’ve added lots of liquors to dishes but never Blue Curacao. My husband looked at the picture and said no. He isn’t very adventurous with food. I may try this one with curacao. It sounds delicious. Love the blue theme.
