Truly Mexican: Essential Recipes and Techniques for Authentic Mexican Cooking

still blondeThe Chief Blonde Remarks: is my favorite Mexican cookbook. The recipes are obviously by a great chef but the book teaches as you cook. The pictures are phenomenal and this is a large oversized hardcover book that you can display proudly on your cookbook shelf!

  • Publisher: Houghton Mifflin Harcourt; 1 edition (April 19, 2011)
  • 128 recipes
  • Illustrations of every recipe
  • Regional twists are included
  • Recipes cover main dishes, sides, salsas, guacamoles, moles, adobos, and more.

I like the book cover and the statement that its the flavors being complex, not the cooking.

My favorite feature of the book is the Introduction to Mexican Cooking. I haven’t made much authentic Mexican food at home, so I could really use a basic course on fundamentals (spices, etc).

I love how the recipes are authentic but not difficult to prepare! I love how many spices will be used as I’m not very good with knowing what to add!
