The Chief Blonde Remarks: is my favorite Mexican cookbook. The recipes are obviously by a great chef but the book teaches as you cook. The pictures are phenomenal and this is a large oversized hardcover book that you can display proudly on your cookbook shelf!

I like that it Includes a useful Sources section to help readers track down authentic Mexican ingredients. Sometimes it is really hard to find what you need when cooking anything authentic.
I like that Roberto Santibañez shows you that it’s the flavors that are complex, not the cooking. I hardly ever attempt making Mexican because I think it’s too hard, but it’s not, having fresh flavors is the key 🙂

I really love that the book includes regional twists for the recipes. I love traditional Mexican food. Oh, the “Americanized” versions sold at places like Taco Bell are good, but I was introduced to REAL Mexican cooking when I was a kid. Several of my closest friends had parents who came from Mexico and I would eat dinner with them quite often. I’d love to be able to cook the same way myself.
I like that it is simple. I am not a creative cook, but I can follow directions! Also, we don’t often have Mexican food at home, so this would give us some new dishes to try!

The thing I find useful about this book is it includes a useful Sources section to help readers track down authentic Mexican ingredients. This is really important when you want to replicate authentic foods. You can’t just go and pick up a substitute and it taste the same.
I like: An introduction to Mexican cooking covers the main ingredients as well as how they’re best prepared—from toasting tortillas to roasting tomatoes—and offers a few simple kitchen commandments that make great results a given. To help me learn to cook this way.

I find that this cookbook Truly Mexican by Roberto Santibanez would open my eyes to using receipes with different types of foods, including different kinds of salsas, meads chili sauces and that with learning the basic you can probably change any protein to another meal. and I like the idea of using rotisserie chicken

I absolute love chicken mole tacos – but I have never made the mole sauce from scratch. This book has at least 1 mole sauce recipe. hooray!
I like the emphasis on authentic recipes and ingredients.
I love that the recipes are authentic. I like Tex-Mex and other “Mexican” food, but there is nothing like that true Mexican food you can get in Mexico. One of my favorite cities is San Miguel de Allende and I had some amazing food there. I would love to make cook a few dishes that remind of of all the complex flavors that I love so much.
