The Chief Blonde Remarks: is my favorite Mexican cookbook. The recipes are obviously by a great chef but the book teaches as you cook. The pictures are phenomenal and this is a large oversized hardcover book that you can display proudly on your cookbook shelf!

My favorite aspect about the book is that it provides straightforward instructions on essential techniques like roasting chiles, making fresh tortillas, and filling enchiladas, because not everyone is familiar with these techniques.
I like it’s illustrated 🙂 Photos help me understand what it’s supposed to look like.
I like that it focuses on sauces you can use as building blocks for dishes.
I like that it gives recipes for REAL Mexican food.
This review let me know that cooking Mexican food is not as hard as people think it is.
I like the fact that the recipes are authentic, not just the run-of-the-mill Tex-Mex that so many other cookbooks feature. I like it so much that I’ve added it to my Amazon Wish List.
Being born and raised in the state of Nebraska, I hadn’t been introduced to Mexican foods until I moved to Southern California (well, we did have a Taco Bell in Lincoln, but to me, that isn’t REAL Mexican food). My fave is a bean, cheese and rice burrito made at a change restaurant called Miguel’s Jr. I love making my own chicken and cheese enchiladas. Hubby likes ’em hot…me with mild sauce. I like that he includes sources for ingredients. (I live in Southern California now, so I have several Mexican markets handy, but I remember living in a rural area where ingredients were hard to find!)

I love authentic Mexican cuisine. I lived in a Hispanic neighborhood for a few years and there is nothing like fresh baked tortillas from the little bakery around the corner or the phenomenal food in the restaurants in the neighborhood. I would love to recreate some of those dishes at home.
I love that it’s illustrated. The photos make it easier to know what a dish should look like.
