This tangy sweet recipe is sweetened with corn and the tang comes from vinegar, lime juice and seasonings.

Ingredients
  • 3 ears of Sunshine Sweet Corn
  • 1 can Black Beans, drained and rinsed
  • 1 ripe Avocado, peeled, pitted/ and diced
  • 3 Roma Tomatoes, seeds removed and diced
  • 1 pkg. Dry Italian Dressing
  • ¼ cup Extra Virgin Olive Oil
  • ¼ Cider Vinegar
  • 3 green onions, diced (optional)
  • 3 Tbs fresh Cilantro, chopped fine (optional)
  • 3Tbs Lime Juice (juice of 1 lime)
  • Dash of Tabasco Sauce
  • Salt and Pepper to taste
  • One Head of Romaine lettuce chopped into thin ribbons
  • Nacho Chips (Optional)
Instructions
  1. Mix and marinate all ingredients for 24 hours
  2. Serve over ribboned romaine and nacho chips for a salad or with nacho chips alone as a dip.
